The tiered wedding cake is simple to make because all of the layers are basically the same. While you will need different baking pans for the different tiers, you don't have to use different cake mixtures.

Fruit cake is the traditional wedding cake. You don't need to find any special recipes just because it will be used as a wedding cake. You can use any fruit cake recipe that works well for you. If you do not already have a favorite recipe then try a few different ones on your friends and family in plenty of time before the wedding.

The great thing about using fruitcake for weddings, is that you can bake it way ahead of time; as long as you keep it covered in almost paste, it will last up to a month after being made. The frosting will be the only thing you will have to make before the wedding.

If you want to make a different type of cake you may be able to freeze it. However, keep in mind that most light sponge type cakes are best eaten within 2-3 days of making. You can freeze them for a week or two, but they won't be as good.

When it comes to frosting, this is pretty simple too if you choose the classic tiered design. You only need to cover the layers with white frosting and then work a simple design at the edges. The tops of the lower tiers will not be seen because each one is covered by the tier above.

The top tier can be decorated with figurines, petals, flowers, or anything else you wish. You can buy these at virtually any store that sells cake decorations or on line. This way you won't even need any exotic, complicated frosting for the top layer.
